Christmas Menu 2010

Each year, Indish sources fresh, local and seasonal ingredients to bring you a gourmet chef-prepared Christmas dinner.
This year, we’re pleased to bring you non-medicated and hormone-free fresh brined turkeys,
or AAA Beef Tenderloin Chateaubriand, alongside delicious sides and desserts.
Just pop everything in the oven, and sit back and relax for the holiday.


Mains

BC Free-Range Non-Medicated Fresh Brined Turkey in Honey Apple Thyme Glaze
with white wine roasted shallot jus and cranberry cinnamon compote
Non-medicated and hormone-free fresh turkey from Rossdown Natural Foods Farm in Fraser Valley,
marinated in a flavourful brine of vegetable stock, apple juice, white wine and fresh herbs


Starting at 12 lbs - recommend 1.5 lb per guest - $7.50 / lb

Price of turkey will be based on the actual weight.

Roasted AAA Beef Tenderloin Chateaubriand in a Creamy Peppercorn Sauce
marinated in pink, green, black peppercorn and garlic rosemary rub

Roasted Chestnut Apple Sage Stuffing
Artisan bread from MIX the bakery, with roasted chestnut, apple, sage and fresh herbs

Caramelized Onion Potato Dauphinoise with Applewood Smoked Cheddar
Caramelized onion, fresh herbs, layered sliced potatoes, cream, and applewood smoked cheddar

Seasonal Honey Rosemary Roasted Vegetables
Butternut squash, turnip, yam, celeriac, carrot, onions and garlic in a honey rosemary thyme seasoning

Sticky Toffee Pudding with Indish Caramel Sauce
