Shiitake Mushrooms
Recently, a customer queried our use of shiitake mushrooms in our Duck Breast and Creamed Cabbage dish, why not use regular mushrooms?
It’s a good question – shiitakes have four to ten times the flavour of common white button mushrooms. In addition to their robust/pungent, woodsy flavour and meaty texture, shiitakes provide high levels of protein (18%), potassium, niacin and B vitamins, calcium, magnesium and phosphorus.
